Saké Collins w/ Preserved Lemon


I discovered this cocktail when my home bar was running really dry but I had an almost full bottle of saké so of course I turned to the internet and found this. It is SO good. It doesn't taste strong of saké if you are worried about that. And if you are, gin or vodka would be great substitutes. It's a light & refreshing perfect poolside/summer cocktail. 

Ingredients
2 oz. saké

1 oz. fresh lemon juice
¼ preserved lemon (cut into a wedge)
½ oz. preserved lemon juice
1 tsp sugar or honey
Club Soda, I love using topo chico
garnish: lemon peel or slice of preserve lemon

You'll need a shaker and muddler.

Directions
1. Shake saké, sugar/honey, lemon juices, and preserved lemon wedge without ice to emulsify the sugar/honey into the mixture. 

2. Add ice and shake to chill. Strain into a tall glass over fresh ice. Top with club soda and garnish. Cheers!
