Carrot Fritters Topped w/ Whipped Dill Goat Cheese


It's that perfect bite size appetizer for your guest to feel a little guilt free about because it's carrots! Fried carrots, but still counts as a veggie. It's an unexpected delicious bite too. There's sweetness from the carrot, paired with a savory onion
and topped with the tangy dill cheese. It's delightful and addicting. So make extra! 


Ingredients
1 lrg bag of carrots, washed peeled & grated
1 1/2 cup chopped green onions *about 2 bunches
1 egg, beaten
1/3-1/2 cup all purpose flour
vegetable oil, enough to generously coat your skillet
5 oz plain goat cheese, room temp
4 oz plain cream cheese, room temp
1/2 cup dill, chopped *reserve some fronds for garnishes
salt & pepper

Directions
1. In a mixer bowl (if you have a stand mixer) combine goat cheese, cream cheese and salt & pepper. Whip together until thoroughly mixed. Add the dill and mix that together lightly. Place in to fridge while frying the fritters. Remove about 20-30 minutes before plating to allow it to come to room temp. It's just easier to work with this way.
*If you don't have a mixer, you can do it by hand. It will just take a little longer. 

2. Combine carrots, green onions, salt, pepper, and the egg in a mixing bowl. The carrots will sweat a bit from being salted, so I always add flour last. Sprinkle in 1/3 cup of flour at first, and stir to incorporate. You are aiming for a consistency that will hold the ingredients together, not too wet not too dry (add more flour if the batter feels excessively drippy).
*As you fry in batches you may notices you need to sprinkle a little more flour as the salt continues to sweat the carrots. It's handy to keep the flour near by.

3. Meanwhile, heat the vegetable or olive oil (enough to generously coat your skillet) over medium-high heat until the oil is rippling. Form fritters like a patty in your hand, fry them until brown and crispy (about 3-4 minutes per side) and let them rest on paper towels to collect excess grease.
*I like to do about 3 minutes on one side, flip and 4 on the bottom keep more color on the top for presentation. 

4. Serve immediately topped with the whipped dill cheese, and garnish with a little piece of dill. You can also leave plain until party time, and quickly reheat on a cookie sheet in a 400° F oven for 5 minutes. Top with cheese, sprinkle with garnish and serve immediately.
