Crostini Topped w/ Honey & Pistachio Goat Cheese
Is this my cheese ball recipe reinvented? Why yes, yes it is. So if you have made the ball before, this is going to feel vary familiar but the presentation looks very elevated! It's the perfect way to serve a cheesy appetizer when you maybe want to skip a whole cheese board.
Ingredients
1 baguette, thinly sliced
olive oil
flakey salt
4 oz plain goat cheese
3 oz plain cream cheese
1/2 cup pistachio nuts, crushed
kosher salt
honey for drizzling on top
1. Preheat oven to 400.
2. Combine the goat cheese and cream cheese into a mixer if you have one, otherwise a large bowl. Mix till they are smooth. Add in about 3/4 of the crushed pistachios and the pinch of salt. Mix until nuts are evenly distributed.
3. Spread the sliced baguette out on a sheet pan and drizzle with some olive oil flip and drizzle the other side. Place sheet pan into the oven and toast for about 8-10 minutes, flip and toast for another 2 minutes until perfectly golden. Sprinkle with flakey salt right when you remove them from the oven. Let cool completely before adding the toppings.
4. Assemble the crostini about 10-15 minutes before guest arrive. On top of each crostini spread a nice layer of the goat cheese mixture, sprinkle with the last of the pistachios and drizzle with honey. Transfer to your serving platter of choice and set out for your guests!
*A fun thing to do to make it look extra special is placing a pretty little vessel with honey and little spoon for guests to drizzle more honey if they desire.
