Smoked Trout Dip w/ Potato Chips

If you are not a regular consumer of tinned fish, this may sound very intimidating. And I get it! My experience with tinned fish was limited to just tuna, and that was it for years! Just recently I started to venture out and it has been an adventure I do not regret. This smoked trout dip may actually take #1 place in dips over my signature dill dip (GASP!). It's salty, smokey and tangy. It does not taste like fish. I can feel your eye rolls...but I swear I am not lying. Skeptic friends have been convinced time over time. Just make it already!

Ingredients
3.5-4 oz tinned smoked trout *Trader Joes brand is what I use, it's 3.9 oz
1 lemon
3/4 cup sour cream
1/4 cup mayo
1/2 bunch of chives. finely chopped
salt & pepper
your favorite bag of plain potato chips

Directions
1. In a bowl, mix the sour cream & mayo until well combined.

2. Zest 1/2 of the lemon in to the mixture, cut in half and squeeze the juice of the entire lemon. Mix well.

3. Add the finely chopped chives. With your hands, flake apart the trout in to 1/2 inch pieces and add in to the mixture. Discard the oil. Season with a good amount of black pepper and a little salt (the fish is usually pretty salty so taste and adjust). Mix it all together and transfer to your serving bowl. Serve with your potato chips of choice.
