Cucumber Pico De Gallo

A chunky salsa that is the perfect refreshing bite to top your tacos with or to serve on the side with chips and a cold beer. Blue Apron had us make a version of this with radish. I adopted it and adjusted it into something that has become a staple in our home. I added some ingredients that I love like Persian cucumbers and pickled jalapeño (or roasted green chiles). It is such an easy one to make! I am talking less than 10 minutes depending on your chopping skills. And that is really all it is, lots of chopping with the squeeze of lime. Too easy to not try and I swear it will be a hit with your fam or guest.
This is a good serving for 4 people but also extremely easy to double or triple if needed.


Ingredients
1 cup of diced cherry toms
1 cup of diced Persian cucumber
2-3 tablespoons of diced red onion
2 tablespoons of diced pickled jalapeño or green chiles (I used roasted here)
1 lime, halved
salt & pepper

Directions
1. If you haven't already chopped everything, get to chopping.

2. Add all veggies and toms into a medium bowl and mix together. (Great bench scraper recipe!)

3. Squeeze lime over mixture and salt and pepper to taste. 

4. Let it sit in the lime for 5-10 minutes before serving. Give it a stir every once in awhile to redistribute the salty lime juice. 

5. Serve!

Great as a topping for tacos, nachos or salads. But also an amazing salsa served with chips! Yum! It is a go-to recipe for warm weather meals as it is a bite of freshness and no cook! Serve it up with my guacamole to impress the family & guest.
