the Dill Dip.
A dip that takes less than 5 minutes to make. One that has zero cooking involved. All it needs is some minor chopping, mixing and TASTING. It a mouthful of tangy freshness that you will make excuses just to whip up and put it on anything and everything. It's good with chips and veggies, dolloped on baked potatoes, slathered on sandwiches, smeared on fish, tossed in a bed of greens with some grilled chicken, plopped on a cheesy omelet; ok, I think you get the point. There are endless ways and reasons to make this dip.
The best part about it is you can make it ahead of time and keep it in the fridge for up to 5 days and the dill flavor only gets better!
Without further ado, this one is for all my dill lovers:
Ingredients
1 cup full fat Greek yogurt
1/2 cup chopped dill, (you can ALWAYS add more)
1 lemon, cut in half
Salt & Pepper
Directions
1. Add yogurt to a bowl and squeeze one half of the lemon; mix well.
2. Add the chopped dill to the lemony yogurt; mix well. Salt and pepper the dip.
3. Taste! Does it need more lemon? Squeeze the left over half of lemon! Maybe it needs more salt or even MORE DILL. It wouldn't hurt. It should taste like a fresh tangy mouthful of dill. Add to your liking and serve!
